Elysian Springs 'Spring Lamb' Syrah 2019

Can't have party food without something to drink - can we?? Good party food is definitely bubbles but bubbles is such a cop-out. Let's make it a little more interesting and go with a deliciously juicy Riesling. 

If you haven't got a beer in your hand or you're more of a wine fan like myself, then it's gotta be white with this bad boy. A lot going on in the sandwich so let's choose something that doesn't wanna play the staring role but will leave you talking about the role it played for a long time afterward! Today, that comes in the form of the beautiful Riposte 'The Stiletto' Pinot Gris from winedirect.com.au. I love the 'stiletto' term used for this wine because it does EXACTLY what a stiletto does with the chicken satay sandwich, as it does for many a leg!! It's gonna lift it, elevate it and leave you wanting more. 

I love the name, it could be the bad guy in a poorly shot western movie but instead it's yet another recipe from yours truly that the Heart Foundation has tried to censor.

Shiraz (which is essentially Syrah) is a dark-skinned grape grown throughout the world and used primarily to produce powerful red wines.

Wines made from Syrah are often powerfully flavoured and full-bodied. The variety produces wines with a wide range of flavor notes, depending on the climate and soils where it is grown, as well as other viticultural practices chosen. Aroma characters can range from violets to berries (usually dark as opposed to red), chocolate, espresso and black pepper. No one aroma can be called "typical" though blackberry and pepper are often noticed. With time in the bottle these "primary" notes are moderated and then supplemented with earthy or savory "tertiary" notes such as leather and truffle.

"Secondary" flavor and aroma notes are those associated with several things, generally winemakers' practices (such as oak barrel and yeast regimes).
