Ca’ Botta’s highest quality fruit is air dried for 100 days prior to fermentation meaning that 2.2 kgs of fruit are required to make each bottle! This is incredibly, long, concentrated and complex… savour this over a few hours and you may well see black tea, spices, blackberries, cherries, rosemary, dark chocolate, prunes, green peppercorns, and coffee. In theory this is an entry level wine for Ca’ Botta, carrying the IGT designation rather than the more favoured DOC or DOCG status. Why? Because this is a wine made using Amarone methods using primarily Amarone varieties with the inclusion of Cabernet which is not allowed in Amarone production… They add Cabernet to build freshness and change the tannin profile … to make something as good but a little different to a traditional Amarone. 2.2 kilos of fruit are needed to make just one bottle. A blend of Pinot Noir, Chardonay and Pinot Meunier, fashioned from vineyards in Epernay, Pierry, Chouilly and Barbonne. 10% is aged in oak and 10% of the finished wine is sourced from the Bouché Reserve wine program, which is held in oak. Lots of red fruit aromatics and flavours here, with excellent persistence and length and a very fine bead. Complex, aromatic and subtly oaked, this is a superb Champagne Rosé. Learn More

Medium-bodied, off-dry and complex. This is a blend of 2019 Shiraz aged in oak and 2021 Shiraz aged in stainless. Both vintages were exceptional. The 2 were then blended and a fairly small dosage for sweetening was added. This is spiced, aromatic, plummy, and Christmas cakey all at once. Lovely. Learn More

This is a mighty Shiraz, rich dark cocoa and coffee licks mix seductively with and a beautiful cedar platter. Dark fruit and five spice float through the palate lingering to a long finish of fine tannin. Learn More

Massive- a big, dark and super rich red wine, yet smooth and textural. Plenty of oak, and good acidity. On the tasting panel, we kinda expected to hate this, given it's 16.3% alcohol – fair to say we were wrong! Learn More

A beautiful sparkling made from Adelaide Hills Chardonnay and Pinot Noir, using the Methode Champenoise. The wine was aged on lees in bottle for 2 years prior to disgorgement.
