In theory this is an entry level wine for Ca’ Botta, carrying the IGT designation rather than the more favoured DOC or DOCG status. Why? Because this is a wine made using Amarone methods using primarily Amarone varieties with the inclusion of Cabernet which is not allowed in Amarone production… They add Cabernet to build freshness and change the tannin profile … to make something as good but a little different to a traditional Amarone. 2.2 kilos of fruit are needed to make just one bottle. Produced from 120-year-old Grenache bush vines and 80 year old Shiraz vines. The fruit is cold soaked for 14 days before a slow ferment. It is then pressed into new and 2 year old oak where it is allowed to mature 18 months. No made in every vintage and even then in tiny quantities. This blend sees early ripening Cab blended with Merlot and Cab Franc left to hand a little longer on the vine than normal. This enables the 3 varieties to be picked at the same time and co-fermented, resulting in the perfectly harmonious integration of flavours.
