In theory this is an entry level wine for Ca’ Botta, carrying the IGT designation rather than the more favoured DOC or DOCG status. Why? Because this is a wine made using Amarone methods using primarily Amarone varieties with the inclusion of Cabernet which is not allowed in Amarone production... They add Cabernet to build freshness and change the tannin profile... to make something as good but a little different to a traditional Amarone. 2.2 kilos of fruit are needed to make just one bottle. The word ‘Superiore’ on the label means this wine is produced from the winery's highest grade of fruit. ‘Ripasso’ means repassed... a process whereby the fermented wine made from air dried grapes has pressed skins from their Tenuta Cajo Amarone added to it. This kicks off a second fermentation and softens tannins while adding body, fruit intensity, complexity and richness. This wine is a seriously mean mutha, packed with thyme, rosemary, black pepper, plums, blackberries, smoke, graphite, smoked meats, charcoal, star anise and plenty more. This is the seventh release of their flagship ‘Hills shiraz and as usual you’re hit immediately with a waft of black and blue fruits and the trademark white pepper that announces this wine as a “hills monster". The palate is full bodied and it’s here you see even more layers of complexity and intrigue, no doubt due to the co-fermentation of 5 different clones scattered throughout this unique vineyard. This will offers years of cellaring but to enjoy now, bust out the decanter for an hour to release all of this lovely flavour.

The Grenache (from 95 year old bush vines) was fermented on skins for 10 days after harvest with a small element of whole bunch. The shiraz is from Blewitt Springs and fermented on skins for 8 days then pressings were added back in. Both wines were then transferred to 8 and 9 year old barrels for the wines to develop without the intrusion of oak flavour.

This is a magnificent blend of robust, full bodied shiraz with spice and chocolate offset by the juicy red and blue fruits of old vine grenache. A wonderful wine to enjoy now but the structure suggests it has 10-15 years of improvement ahead of it.

This is McLaren Vale Grenache in all its playful and complex glory.
