A wonderful, textural, stonefruit driven and buttery, full bodied Chardonnay. Just the best fruit is taken from Dowies elevated, sandy soiled Blewitt Springs Vineyards. After a gentle press without the use of rollers, a mix of whole berries and juice is inoculated with yeast, and once that is rolling is transferred to older French oak. Ferment finishes and the lees stirring begins, building layers of texture and creaminess which is bolstered by malolactic fermentation. This is fully worked Chardonnay in all its glory. Learn More

Since 1996, Chris Thomas has maintained a shiraz solera which form part of this lip smacking sparkling. The solera contains some of the best shiraz Chris has made over the last 20+ years and is used sparingly and exclusively to add the finishing touches to his sparkling shiraz each year and adds depth of flavour and complexity. This is sparkling shiraz as we love it- opulent, slightly sweet, with richness, complexity, oak and plenty of fine tannins. Only tiny quantities are made of this wine, which is the product of the finest of Dowie Doole's A-grade Cabernet fruit from each vintage. '21 being an incredible vintage has elevated this even further. The previous vintage picked up 96 points from Kim Brebach who said, "Decades ago, I had the privilege of tasting a group of Barolos and Barbarescos made by Giovanni Gaia. These wines had layers of deep flavour, ranging from smoked meats and old leather to licorice, gravel dust and tar. The Dowie Doole Architect reminded me of those wines because it had some of those characters, even if the expression was more restrained. Give it time, and I think you’ll be richly rewarded. If the price seems steep, keep in mind that a Barbaresco from Gaia will set you back $600." Leasingham wines have been around since the 1890s and have been steered by a series of legendary winemakers over the years. It wasn’t until the early 70s that the Bin series kicked off, with a Bin 61 Shiraz and a Bin 56 Cab Malbec. These were both highly prized for their exceptional quality and regular ability to out-perform wines selling at 2-3 times their asking price. A few of us from WD were lucky enough to attend a vertical tasting with Tim Knappstein (one of the aforementioned and legendary Leasingham alumni) a decade or so ago and came away incredibly impressed with the quality and consistency of the wines. We looked at over 20 vintages, and everything we tasted was still showing fruit, the best of them were exceptional. So it’s a little sad that the '21 may be the last vintage of the Bin 61 Shiraz. Lots of good stuff here, black tea, chocolate, coffee grounds, mint, plum, charcuterie, and blackberries. This is the seventh release of their flagship ‘Hills shiraz and as usual you’re hit immediately with a waft of black and blue fruits and the trademark white pepper that announces this wine as a “hills monster". The palate is full bodied and it’s here you see even more layers of complexity and intrigue, no doubt due to the co-fermentation of 5 different clones scattered throughout this unique vineyard. This will offers years of cellaring but to enjoy now, bust out the decanter for an hour to release all of this lovely flavour.

The Grenache (from 95 year old bush vines) was fermented on skins for 10 days after harvest with a small element of whole bunch. The shiraz is from Blewitt Springs and fermented on skins for 8 days then pressings were added back in. Both wines were then transferred to 8 and 9 year old barrels for the wines to develop without the intrusion of oak flavour.

This is a magnificent blend of robust, full bodied shiraz with spice and chocolate offset by the juicy red and blue fruits of old vine grenache. A wonderful wine to enjoy now but the structure suggests it has 10-15 years of improvement ahead of it.
