The 2024 is now 100% made from Grenache selectively picked from Block 32. Gently airbag pressed and fermented with the juice being allowed to settle prior to a long, cool ferment to help maintain all the lovely notes from vintage 2024. Following fermentation, the wine was left on lees for the right balance, structure and mouthfeel. A beautiful sparkling made from Adelaide Hills Chardonnay and Pinot Noir, using the Methode Champenoise. The wine was aged on lees in bottle for 2 years prior to disgorgement. A little riper than most PGs, this definitely a nod towards the style of Alsace. Gorgeous ripe pears and musk on the nose and palate which is already creamily textural. This mid-palate mouthfeel will continue to develop with time as the wine grows into itself.
