This is sourced entirely from old, estate grown, ungrafted Barossa vines. The fruit from these gnarly old vines is handpicked before whole bunch fermentation in open fermenters, then pressed into French oak where it spends 15 months. A tightly coiled Cab that needs a little coaxing by way of an hour or 2 in the decanter. While that's happening, turn your thoughts to lamb and what you might be eating in an hour or 2 when the wine is cherry ripe. Funnily enough, we found cherries here, along with blackcurrant, cocoa, tomato leaf and a plushness emerging from an intense baseline once the wine had gulped a little air. This is the seventh release of their flagship ‘Hills shiraz and as usual you’re hit immediately with a waft of black and blue fruits and the trademark white pepper that announces this wine as a “hills monster". The palate is full bodied and it’s here you see even more layers of complexity and intrigue, no doubt due to the co-fermentation of 5 different clones scattered throughout this unique vineyard. This will offers years of cellaring but to enjoy now, bust out the decanter for an hour to release all of this lovely flavour.
