Gently airbag pressed and fermented with the juice being allowed to settle prior to a long, cool ferment to help maintain all the lovely notes from vintage 2024. Following fermentation, the wine was left on lees for the right balance, structure and mouthfeel. The shiraz is from Blewitt Springs and fermented on skins for 8 days then pressings were added back in. Both wines were then transferred to 8 and 9 year old barrels for the wines to develop without the intrusion of oak flavour.
This is a magnificent blend of robust, full bodied shiraz with spice and chocolate offset by the juicy red and blue fruits of old vine grenache. A wonderful wine to enjoy now but the structure suggests it has 10-15 years of improvement ahead of it. Stonefruits, citrus, hazelnuts, ginger powder, florals and crystalline acidity. Maximum of 3 tonnes per acre from their non-irrigated vineyard. Fruit is handpicked at about 12 Baumé with 40% retained as whole bunches. The wine is lees stirred in barrel once a week. The net effect is a wine with balance, precision and purity, with intense stonefruit carried forward by grapefruity acidity which is softened by creaminess and complexed by super high-quality French oak and a slight phenolic grip.
