A little riper than most PGs, this definitely a nod towards the style of Alsace. Gorgeous ripe pears and musk on the nose and palate which is already creamily textural. This mid-palate mouthfeel will continue to develop with time as the wine grows into itself. Only free run juice from whole bunch pressings were used and a small percentage of the wine spent time in old French oak. The result is a mixture of freshness and texture. This is the seventh release of their flagship ‘Hills shiraz and as usual you’re hit immediately with a waft of black and blue fruits and the trademark white pepper that announces this wine as a “hills monster". The palate is full bodied and it’s here you see even more layers of complexity and intrigue, no doubt due to the co-fermentation of 5 different clones scattered throughout this unique vineyard. This will offers years of cellaring but to enjoy now, bust out the decanter for an hour to release all of this lovely flavour.
