This is Hirsch Hill's flagship Chardonnay, estate grown in the Toolangi sub-region of the Yarra Valley. A cracking Chardy offering florals, green apple, spice, hazelnut, stonefruit and more. Plenty of acid here, a creamy palate and judicious use of French oak make this an almost complete expression of cool climate Chardonnay. The only thing that can make it better is time. Fermented on skins for 10 days after harvest with a small element of whole bunch. The wine was then transferred to 8 and 9 year old barrels for the wine to develop without the intrusion of oak flavour.

From a single vineyard in the Woodside sub-region of the Adelaide Hills, the fermentation was with wild yeasts and 30% whole bunches. Fermentation is in small batch open fermenters. The wine then enjoys eighteen months maturation in French barrels, 20% of which were new. Notes of spices, bright red fruits, red cherries, florals, hints of forest floor characters and animal skins. Red currants and raspberries emerge on the palate. This has bright acidity running the full journey, sleek tannins, balance and exemplary length. Drink for four to eight years.
