This kicks off a second fermentation and softens tannins while adding body, fruit intensity, complexity and richness. This wine is a seriously mean mutha, packed with thyme, rosemary, black pepper, plums, blackberries, smoke, graphite, smoked meats, charcoal, star anise and plenty more.
