Since 1996, Chris Thomas has maintained a shiraz solera which form part of this lip smacking sparkling. The solera contains some of the best shiraz Chris has made over the last 20+ years and is used sparingly and exclusively to add the finishing touches to his sparkling shiraz each year and adds depth of flavour and complexity. This is sparkling shiraz as we love it- opulent, slightly sweet, with richness, complexity, oak and plenty of fine tannins. Fermented on skins for 10 days after harvest with a small element of whole bunch. The wine was then transferred to 8 and 9 year old barrels for the wine to develop without the intrusion of oak flavour.

This is McLaren Vale Grenache in all its playful and complex glory. The nose shows a variety of red and blue fruits of raspberry and blueberry, apparent as soon as you open the bottle, the palate is brooding and complex with layers of juicy fruits and a dry mouthfeel underpinned by powdery tannins… one for the cellar, or a brief decant will open this beauty up for maximum enjoyment.
