Since 1996, Chris Thomas has maintained a shiraz solera which form part of this lip smacking sparkling. The solera contains some of the best shiraz Chris has made over the last 20+ years and is used sparingly and exclusively to add the finishing touches to his sparkling shiraz each year and adds depth of flavour and complexity. This is sparkling shiraz as we love it- opulent, slightly sweet, with richness, complexity, oak and plenty of fine tannins. Spectacularly graceful yet powerful Chardy made from Dijon clones 76, 95, 96 and 277. Stonefruits, citrus, hazelnuts, ginger powder, florals and crystalline acidity. Maximum of 3 tonnes per acre from their non-irrigated vineyard. Fruit is handpicked at about 12 Baumé with 40% retained as whole bunches. The wine is lees stirred in barrel once a week. The net effect is a wine with balance, precision and purity, with intense stonefruit carried forward by grapefruity acidity which is softened by creaminess and complexed by super high-quality French oak and a slight phenolic grip. Pinot Noir is Bill and Dan Pannell’s great love, especially the Pinots of Burgundy. With every year Bill and Dan get a little closer to making the ‘perfect pinot’. When our buyer Matt left Picardy (he was vineyard serf and assistant winemaker until 2003), the wine was made from 5 clones, including the highly prized Burgundian selection ‘777’ which Bill Pannell spent close to a decade getting into Australia. You’ll now find a number of Aussie wineries with 777 planted, all thanks to the hard work of the Pannells. Today the Pinot is made from 11 individual clones, 6 of which have been sourced from Corton, Burgundy. Whilst the wine was excellent back in the early 2000’s, it is now superb, one the best Pinot Noirs made in Australia, year in, year out. The 2021 is perfectly balanced, structured, chalky, elegant and mineral. There are plenty of red fruits, spice, and cedar. The perfect balance of fine boned acidity, mouthfeel and texture makes this wine seem elegant and effortless, yet it is incredibly powerful and deep. Tannins on the finish are glassine in a very Burgundian fashion. Magnificent.

A little riper than most PGs, this definitely a nod towards the style of Alsace. Gorgeous ripe pears and musk on the nose and palate which is already creamily textural. This mid-palate mouthfeel will continue to develop with time as the wine grows into itself.
