Since 1996, Chris Thomas has maintained a shiraz solera which form part of this lip smacking sparkling. The solera contains some of the best shiraz Chris has made over the last 20+ years and is used sparingly and exclusively to add the finishing touches to his sparkling shiraz each year and adds depth of flavour and complexity. This is sparkling shiraz as we love it- opulent, slightly sweet, with richness, complexity, oak and plenty of fine tannins. The previous vintage picked up 96 points from Kim Brebach who said, "Decades ago, I had the privilege of tasting a group of Barolos and Barbarescos made by Giovanni Gaia. These wines had layers of deep flavour, ranging from smoked meats and old leather to licorice, gravel dust and tar. The Dowie Doole Architect reminded me of those wines because it had some of those characters, even if the expression was more restrained. Give it time, and I think you’ll be richly rewarded. This is the seventh release of their flagship ‘Hills shiraz and as usual you’re hit immediately with a waft of black and blue fruits and the trademark white pepper that announces this wine as a “hills monster". The palate is full bodied and it’s here you see even more layers of complexity and intrigue, no doubt due to the co-fermentation of 5 different clones scattered throughout this unique vineyard. This will offers years of cellaring but to enjoy now, bust out the decanter for an hour to release all of this lovely flavour.

The Grenache (from 95 year old bush vines) was fermented on skins for 10 days after harvest with a small element of whole bunch. The shiraz is from Blewitt Springs and fermented on skins for 8 days then pressings were added back in. Both wines were then transferred to 8 and 9 year old barrels for the wines to develop without the intrusion of oak flavour.

This is a magnificent blend of robust, full bodied shiraz with spice and chocolate offset by the juicy red and blue fruits of old vine grenache. A wonderful wine to enjoy now but the structure suggests it has 10-15 years of improvement ahead of it.
