A wonderful, textural, stonefruit driven and buttery, full bodied Chardonnay. Just the best fruit is taken from Dowies elevated, sandy soiled Blewitt Springs Vineyards. After a gentle press without the use of rollers, a mix of whole berries and juice is inoculated with yeast, and once that is rolling is transferred to older French oak. Ferment finishes and the lees stirring begins, building layers of texture and creaminess which is bolstered by malolactic fermentation. This is fully worked Chardonnay in all its glory. Learn More

This is the seventh release of their flagship ‘Hills shiraz and as usual you’re hit immediately with a waft of black and blue fruits and the trademark white pepper that announces this wine as a “hills monster". The palate is full bodied and it’s here you see even more layers of complexity and intrigue, no doubt due to the co-fermentation of 5 different clones scattered throughout this unique vineyard. This will offers years of cellaring but to enjoy now, bust out the decanter for an hour to release all of this lovely flavour.

The Grenache (from 95 year old bush vines) was fermented on skins for 10 days after harvest with a small element of whole bunch. The shiraz is from Blewitt Springs and fermented on skins for 8 days then pressings were added back in. Both wines were then transferred to 8 and 9 year old barrels for the wines to develop without the intrusion of oak flavour.

This is a magnificent blend of robust, full bodied shiraz with spice and chocolate offset by the juicy red and blue fruits of old vine grenache. A wonderful wine to enjoy now but the structure suggests it has 10-15 years of improvement ahead of it.
