Winemaker Paul Gordon works 2 very different ferments here... one aromatic ferment... where juice was cold settled, racked with low solids and cold fermented using an aromatic yeast. The other portion was fermented with whole solids and natural yeast at a warmer temperature, then allowed to undergo malo-lactic fermentation to promote mouthfeel and length. A slightly pink sparkling this one. It’s labelled rosé but to us seems much more like a traditional cool climate Chardy Pinot sparkling and a bloody good one at that. Spectacularly graceful yet powerful Chardy made from Dijon clones 76, 95, 96 and 277. Stonefruits, citrus, hazelnuts, ginger powder, florals and crystalline acidity. Maximum of 3 tonnes per acre from their non-irrigated vineyard. Fruit is handpicked at about 12 Baumé with 40% retained as whole bunches. The wine is lees stirred in barrel once a week. The net effect is a wine with balance, precision and purity, with intense stonefruit carried forward by grapefruity acidity which is softened by creaminess and complexed by super high-quality French oak and a slight phenolic grip.
