"Lambascioni" is pickled onions, and with melt-in-your-mouth lamb it's just magic. What a treat for a Sunday roast!
Ingredients
2 tbs black peppercorns Olive oil 4 x 140g eye fillets steaks 360g kipfler potatoes Sea salt 3 tbs garlic cloves 2 bay leaves 2 sprigs rosemary 6 thyme sprigs 250ml vinaigrette 200g green beans, topped and tailed 1 baby gem lettuce, outer leaves removed 4 tbs baby watercress 100g crème fraiche 1 tbs horseradish relish 2 tsp Dijon mustard Slow Cooked Tomatoes 20ml extra virgin olive oil 2 cloves garlic, finely chopped 1 tsp fresh thyme leaves 1 tsp fresh oregano leaves 4 small gourmet tomatoes Pinch sugar Sea salt and freshly milled pepperMethod
Grind peppercorns in a pestle and mortar until finely and evenly crushed. Tip into a sieve and shake to remove finely ground pepper leaving only the coarsely ground mignonette. Brush steaks with oil and press on crushed peppercorns. Cover potatoes with
Shiraz (which is essentially Syrah) is a dark-skinned grape grown throughout the world and used primarily to produce powerful red wines.
Wines made from Syrah are often powerfully flavoured and full-bodied. The variety produces wines with a wide range of flavor notes, depending on the climate and soils where it is grown, as well as other viticultural practices chosen. Aroma characters can range from violets to berries (usually dark as opposed to red), chocolate, espresso and black pepper. No one aroma can be called "typical" though blackberry and pepper are often noticed. With time in the bottle these "primary" notes are moderated and then supplemented with earthy or savory "tertiary" notes such as leather and truffle.
"Secondary" flavor and aroma notes are those associated with several things, generally winemakers' practices (such as oak barrel and yeast regimes).

Around 50km southeast of Adelaide, and just north of Lake Alexandrina, Langhorne Creek is one of the oldest vineyard regions in South Australia. With vines first planted in 1860's, it is predominately a producer of full-bodied reds. Cabernet sauvignon and shiraz do well in the cool climate, and benefit from the unique soils along the riverbanks.
The climate is often cool, with southerly winds coming in from the ocean and blowing straight across Lake Alexandrina. Like most South Australian regions, the heat will kick in when the wind comes down from the north in summer, but there are intermittent and not as constant as they are up north in the Barossa. Soils are deep, sandy loams, regularly flooded in winter by diverting the nearby Bremer River into the vineyards. This all adds up to vigorous vines with generous canopies,

We often joke that there must be more than one Ben Riggs, that no one winemaker could have his hands in such a range of premium McLaren Vale wineries. And yet, after thorough research (we asked) he has not cloned himself.
With 14 years making wine at Wirra Wirra alone, Ben's experience totals a quarter century of producing notable wines, including Penny's Hill, Tatiarra, and Cazal Viel in France. But his real love for McLaren Vale remains, and along with Tony Parkinson, he has crafted successful brands like Woop Woop and his own Mr. Riggs.
With such a broad portfolio, Ben picks up awards with regularity. Twice named Bushing King (for making the best wine at the McLaren Vale Wine Show), and winning the first two Great Australian Shiraz Challenges. His wines have also won best in show at the Sydney International Top 100 (1991 Wirra Wirra "Angelus").
