Seasonal Fig & Prosciutto Pizza

A hearty pizza for footy night. The crumbled Gorgonzola is a great touch. Lose the Prosciutto for a nice vego option...


1 quantity of pizza dough to suit
28cm (11inch) pizza tray (thinner style base)
Drizzle of extra virgin macadamia oil
Generous handful of good quality shredded mozzarella cheese
Small handful of good quality gorgonzola cheese
Handful fresh wild rocket
Shaved fresh parmesan cheese
8 slices thinly shaved high grade Italian prosciutto
1 fresh fig quartered


1. Oil base of pizza tray and spread pizza dough evenly across the base of a 28cm (11inch) pizza tray.
2. Drizzle macadamia oil on top of base. Spread mozzarella evenly across dough and top with crumbled gorgonzola.
3. Cook in hot oven until cheeses are melted and base is golden brown.
4. Remove from oven and garnish with rocket, shaved parmesan, prosciutto and quartered figs.
