Ca’ Botta’s highest quality fruit is air dried for 100 days prior to fermentation meaning that 2.2 kgs of fruit are required to make each bottle! This is incredibly, long, concentrated and complex… savour this over a few hours and you may well see black tea, spices, blackberries, cherries, rosemary, dark chocolate, prunes, green peppercorns, and coffee. In theory this is an entry level wine for Ca’ Botta, carrying the IGT designation rather than the more favoured DOC or DOCG status. Why? Because this is a wine made using Amarone methods using primarily Amarone varieties with the inclusion of Cabernet which is not allowed in Amarone production… They add Cabernet to build freshness and change the tannin profile … to make something as good but a little different to a traditional Amarone. 2.2 kilos of fruit are needed to make just one bottle. Bright tropical fruits with guava and green mango melding with apple and a citric acid zing. A little skin contact is allowed during ferment to encourage texture and ferment is completed in concrete eggs. Planted in in 1992, the Hoopers had their first vintage in '96, eventually achieving organic and biodynamic certification in 2005. Their entire operation is off grid. Learn More

Carlos Serres is a bit of an OG - one of the few Rioja producers with a century of winemaking behind them. Carlos was actually named Charles, a French Winemaker who left Bordeaux, fed up with dealing with phylloxera riddled vineyards, landing in Spain. He founded the first winery in Rioja with export certification and applied French winemaking techniques to Rioja fruit. Pretty soon, there was a demand for Rioja in the rest of Europe and the US.

Carlos Serres Crianza is 100% Tempranillo and spends 14 months in a combo of French and American oak. Being 'Crianza', the wine has spent a year in barrel, and another on bottle prior to release. Typically aged in older oak, Crianza can have quite assertive tannins and fruit which is intense whilst retaining great freshness. This is a particularly good example, packed with red fruits, cherries, spice, oak and nervy acidity.

The most intense and refined of the Carlos Serres wines- a blend of Tempranillo, Graciano and Mazuelo, entirely sourced from the Finca El Estanque vineyard. Only 2% of Rioja wines are released as Gran Reserva, with the best fruit treated to at least a couple of years in oak, generally older, before being bottled at anywhere between 5 and 10 years of age. Carlos Serres choose to release the wine when it is ready to go... and this, the 14 vintage is excellent, offering ripe black fruits, truffles, raspberry, spice, cedar and vanilla. This is all wrapped around a mineral core. The palate is rich and smooth, the finish long and satisfying. Beautiful now, but will cellar for another 5+ as well.

A stunning Reserve Rioja from Carlos Serres, one of the few century old Rioja producers. This is a blend of 90% Tempranillo with 10% Graciano sourced from the winery's 'Finca El Estanque' vineyard and aged for 2 years in French and American Oak. Expressive and fruit driven, this Barbera from Asti in Piedmont is deep, juicy and intense, stopping just short of being rich, though that will come with age. Fruit comes from estate vines grown in the Piedmont sub region of Asti, perhaps the best place in the world to grow Barbera. Specifically, the vines are on the slopes of the San Marzano hills. This wine is made in tiny quantities and is of exceptional quality. After a quick decant wonderful red fruits, violets, cherries, florals, earth, coffee and other goodies emerge. Produced in Piedmont, specifically in the famed Langhe Hills, this beautifully structured Nebbiolo is aged for 12 months in a combination of large format French oak and stainless steel. This is more approachable than an equivalent Nebb from Barolo, the tannins, whilst noticeable and an important part of the wines structure, being less strident than you'll find in most wines from nearby Barolo or Barbaresco. Lots going on here from violet and red fruit aromatics, fresh straw, vanilla, liquorice and spice through truffles, which will continue to develop as the wine ages, plus tobacco and dark chocolate. A lovely, medium bodied, blue fruited and peppery Shiraz from the Yarra Valley. There are red fruits here too, specifically cranberry. The wine is soft and bright with good length. Great with charcuterie or perhaps a prosciutto pizza. Learn More

This is zippy and slightly textural sauv blanc which offers a lovely combo of greenery to go with the passionfruit and tropicals. All in all, there’s plenty going on with this wine for discerning savvy blanc fans. Learn More

Dress it up with a quality beef salad, dress it down with gourmet snags or pizza, this wine works well in a variety of settings. It is a darkly fruited yet eminently slurpable wine thanks to the addition of a few handfuls of Dolcetto. A blend of Pinot Noir, Chardonay and Pinot Meunier, fashioned from vineyards in Epernay, Pierry, Chouilly and Barbonne. 10% is aged in oak and 10% of the finished wine is sourced from the Bouché Reserve wine program, which is held in oak.
