Perhaps the most famous of all white wine blends (at least in Australia) is Semillon Sauvignon Blanc. Deep Woods 'Ivory' Semillon Sauvignon Blanc 2023$17.00Deep Woods have quite the knack of picking up trophies! This is the second iteration of their Margaret River Ivory SSB to score a gold, top gold and Trophy at the Royal Adelaide Show. This edition has a heap of zip and crunch as snow pea, passionfruit, lemon curd and blossoms collide. As we’ve come to expect, perfectly attenuated acidity gives lift and life. Three separate clones of SB are used, with 10% of the fruit whole bunch pressed and 2 different yeasts used to help build complexity. On opening it seems soft and delicate but as it airs, minerality, guava, lime, passionfruit and all manner of complexities emerge.
