The White Stuff: Margaret River, Yarra Valley, Adelaide Hills

Four delicious drink-now whites. That said we’d love you to take the aged Sauv Blanc challenge. Really good Sauv almost always looks better after a year in bottle and can age well for up to a decade. We reckon the Riposte, which is already amazing will look even better in a few years – so we’re putting the challenge out there for you to hide a bottle away from yourself and come back to it in 2024! If cracking a bottle now, the Riposte offers aromas of snow pea, green bean, talcum powder and grapefruit with the palate offering a lovely texture, minerality and balanced acidity. Santa’s Yarra Valley Chardy offers up succulent jasmine aromas, peach, nuttiness, minerality and flecks of spice. It is long and intense with great natural acidity. Grant Burge’s Adelaide Hills Sauvy is bursting with passionfruit counterbalanced by snow pea shoots, grapefruit and a whack of lime zest. Thompson’s Margaret River SBS blends the Sauvy crispness and crunch of snow peas and minerality with richer, barrel-fermented Semillon to create a wine with zip and mouthfeel.
