Jason Schwarz has wine in his DNA; a fifth generation Barossan, he was raised on his parents' vineyard and studied wine marketing before discovering winemaking was his calling. He completed vintages in Bordeaux, Burgundy, The Rhone, Stellenbosch and the Napa Valley before returning to work in a number of different Barossa wineries. He has no formal winemaking training, yet has a rare affinity for growing and sourcing spectacular fruit from vines up to 130 years old, which he picks at optimum ripeness to allow the fruit to shine once bottled. He was one of the very first Barossa producers to pick earlier than the norm. He makes bloody good wines. Little surprise his winery is rated five red stars by Halliday, and that he's one of the select few included as part of the Artisans of the Barossa.

The Schwarz GSM is UBER drinkable. 2017 wasn't the best vintage in Barossa but what the guys have done at the Schwarz company is a wine that you would think came from one of the better vintages! You get notes of soft red fruit, violet, mulberries, and licorice too alongside juicy tannins, perfectly balanced acidity, and a touch of oak. With ratings of 94 points from both Huon Hooke & Nick Butler, it's defo a great drop.

Nicola Potato Gnocchi

Meals like this make us question our carnivorousness... a hearty vego option that is deliciousness personified...

Ingredients

Gnocchi 1 kg (approx) of Nicola Potatoes – washed, but not peeled 1 free range egg 250g (approx) of plain flour 1 pinch of Salt Mushroom Sauce 100g of Onion 500g of Mushrooms 150g of Butter 2 cloves of Garlic 150 ml of White wine 500ml of Cream Truffle Pecorino to finish Sliced chives to garnish

Method

1. Place potatoes in a pot of cold water, bring to the boil and simmer until cooked. 2. Strain potatoes and peel while still hot. 3. With a mouli or potato press mash potatoes on to a bench. 4. Add flour, salt and egg. 5. Mix gently until just combined and dough is slightly springy. 6. Divide dough into 6 and roll into long cigar shapes. 7. Cut into 3 cm lengths – roll on patterned block, grater, or fork. 8. In a large pot of boiling salted water add the gnocchi
