Born in Mount Gambier, in 1969 Pat Tocaciu moved to Adelaide to play football for the North Adelaide Football Club. After studying Oenology at Roseworthy, Patrick’s winemaking career commenced in the Barossa Valley, with Tollana Wines.

Patrick’s extensive knowledge and skills cemented his fine reputation for quality and helped secure international accolades for several major labels while working for them as Chief Winemaker. These included Tollana, Penfolds, Hollick Wines, Heathfield Ridge and DiGiorgio Family Wines. The focus then switched to fulfilling a more personal goal in establishing his family vineyards located at Coonawarra and Wrattonbully, creating his own wine label and opening the Patrick of Coonawarra cellar door in 2004. These days son Luke makes the wines.

If there is one combination to look for when browsing for a good medium-bodied red, Coonawarra, terra rosa and Cabernet Sauvignon is always a winner. Far down the line from Adelaide (about 390km southeast, a grape's throw from the border of Victoria), the name is Aboriginal for "honeysuckle", yet reds from the region are more known for flavours of plum and blackcurrant. The Coonawarra vineyard region is sparse, running along a thin 2km-wide ridge elevating it above surrounding swamp. World-renowned, this 15km stretch of red soil is so unique, it's worth looking it up on google maps and switching to satellite view to see how it is farmed. See that stri ... Read Full Article

In terms of importance for quality wines, it is usually included in the "top three" white wine varieties together with Chardonnay and Sauvignon Blanc. Pork and Black Pudding Burger

This might seem like a strange one, but I can honestly say that this combo really works. Usually, when you think of burgers you lean towards a beer, or even a nice glass of red. The freshness of the apple, spice coming through from the tomato jam, and the addition of pork had me leaning towards a Riesling.

Vietnamese Poached Chicken Salad
As the weather gets warmer, I find the appeal of fresh and crunchy vegetables with citrus flavours gets just that little bit higher. This dish is really easy, quite cheap to prepare if you shop at an asian grocer and you can adapt as you wish.

In Australia

In 1838 William Macarthur planted Riesling vines near Penrith in New South Wales. Riesling was the most planted white grape in Australia until the early 1990s when Chardonnay greatly increased
