An exceptional medium-bodied and complex offering. Aromatics of roses and woodsmoke lead to a palate awash with black olive, smoked meats, cocoa, spice and black liquorice. The acid is noticeable and emphasises the flavours, the finish a slide of powdery tannins. Every release of O.T. Shiraz seems just a little better than the last!

The Oliver’s have been growing grapes in the Vale since the 1840s, only recently stepping into the world of winemaking. The bulk of their grapes go to big company producers hungry for top-end fruit. Consistently picking up high scores and in recent years, supplying grapes to Penfolds to make Grange, Oliver’s Taranga wines are going to go from strength to strength in the years to come under the watchful eye of Corrina Wright.

Wines made from Syrah are often powerfully flavoured and full-bodied. The variety produces wines with a wide range of flavor notes, depending on the climate and soils where it is grown, as well as other viticultural practices chosen. Aroma characters can range from violets to berries (usually dark as opposed to red), chocolate, espresso and black pepper. No one aroma can be called "typical" though blackberry and pepper are often noticed. With time in the bottle these "primary" notes are moderated and then supplemented with earthy or savory "tertiary" notes such as leather and truffle.

"Secondary" flavor and aroma notes are those associated with several things, generally winemakers' practices (such as oak barrel and yeast regimes).
