A groundbreaking Aussie Cabernet in as much as it is made in the Amarone style, with grapes air dried for up to 8 weeks prior to fermentation. It is both concentrated and ethereal with florals and black tea on the nose – the palate awash with chocolate, coffee, cassis, blueberries, herbs, licorice and minerality. Double or triple decant a few hours before drinking.

The Mitolos arrived in Oz in the 1950s, ex the Abruzzo winemaking region of Italy and began market gardening. Later Frank started making wine for family and friends to drink. That was humming along until a quick chat turned into a 5-hour discussion with legendary winemaker Ben Glaetzer, culminating in a 6-word business plan written on a napkin – ‘Individuality, integrity, quality, purity, elegance and power’. Grapes are sourced from family friends and exceptional growers, the Loprestis. Power comes from the heavy clay soils, elegance thanks to the gentle afternoon sea breezes. This inherent complexity ties in neatly with the business plan and winery motto, originally from Abruzzo, ‘Forte a Gentile: strong and gentle.’
