A very generous old vine Shiraz sourced from vineyards in both the Barossa and Eden Valleys. Whole berries were fermented and gently basket pressed into a combination of ceramic eggs and old and new French oak. The end result is a generous, densely fruited wine offering plum, spice, coffee, chocolate and a countervailing savouriness. In short, a ripper.

In a scene that today seems almost as bizarre as Donald Trump becoming POTUS, a patch of 60-year-old Shiraz vines in the North-Western Greenock district of the Barossa was close to being bulldozed. With a lot of love for the Barossa’s old vines and perhaps a dash of foresight, mates Dan and Jaysen lobbied the grower to sell the fruit to them instead, and the “Eleventh Hour” Shiraz was born. Couple this with the number of very old vines in the region (which produce limited quantities of grapes), and the result is fruit with deeply concentrated flavour which quickly ripen. With time in the bottle these "primary" notes are moderated and then supplemented with earthy or savory "tertiary" notes such as leather and truffle.

"Secondary" flavor and aroma notes are those associated with several things, generally winemakers' practices (such as oak barrel and yeast regimes).
