An excellent combo of Langhorne Creek Cab and McLaren Vale Grenache here. Just a brief time on skins to give it that 'Provence Rosé' colouring and the rest is all vibrant aromatics and fruit forwardness. Raspberry and watermelon dominate here complexed with a hint of jalapeño from the Cabernet. Bloody good.

Around 50km southeast of Adelaide, and just north of Lake Alexandrina, Langhorne Creek is one of the oldest vineyard regions in South Australia. With vines first planted in 1860's, it is predominately a producer of full-bodied reds. Cabernet sauvignon and shiraz do well in the cool climate, and benefit from the unique soils along the riverbanks.
The climate is often cool, with southerly winds coming in from the ocean and blowing straight across Lake Alexandrina. This week we sipped on not one, not two but three bottles of Mr Riggs Montepulciano wine. Mr Riggs is a James Halliday 5 star rated winery which is a pretty amazing achievement in itself. You know when you crack open any wine from these guys we are talking about a glass of seriously good wine and this one didn't disappoint either!
As the weather gets warmer, I find the appeal of fresh and crunchy vegetables with citrus flavours gets just that little bit higher. This dish is really easy, quite cheap to prepare if you shop at an asian grocer and you can adapt as you wish.
Roast pumpkin lends itself to quite a few dishes, but with this one it's the centerpiece. Marvelous starter or side.
Ingredients
Raspberry Vinaigrette:
200ml Cranberry sauce
125ml Raspberry vinegar
50ml water
25ml maple syrup
300ml vegetable oil
To taste: salt + pepper
Pumpkin Salad:
200g butternut pumpkin, cubed, sprinkled with coriander and cumin and roasted
1 tbsp dried cranberries
1 tbsp chopped coriander
1 tbsp sunflower seeds
1 tsp minced red onion
1 tsp fresh grated ginger
Salt to taste
Fresh ground black pepper
Mixed salad greens
Method
Raspberry Vinaigrette:
Add raspberry vinegar, cranberry sauce and maple syrup to food processor. Slowly add remaining ingredients and emulsify. Season with salt + pepper
Pumpkin Salad:
In a stainless steel bowl, add the sunflower seeds, minced red onion, ginger and coriander and cranberries. Lightly pan fry pumpkin, toss with above ingredients, pile onto salad greens that have been lightly dressed with raspberry vinaigrette.

Soils are deep, sandy loams, regularly flooded in winter by diverting the nearby Bremer River into the vineyards. This all adds up to vigorous vines with generous canopies, and the classic Langhorne Creek style of red – soft and fragrant, very drinkable when young.
