A slightly pink sparkling this one. It’s labelled rosé but to us seems much more like a traditional cool climate Chardy Pinot sparkling and a bloody good one at that. It has a very fine bead, aromas of stonefruit and red fruits along with a little brioche. Flavours follow suit and introduce cherries and a creamy aspect. This is delicious.

Cool climate Coonawarra Chardonnay and Pinot Noir were harvested separately while sugar levels were low and acidity high to promote elegance and delicacy in the fruit. Cool fermentation was enhanced with a yeast that encourages complexity. Once fermented to dryness, the components were combined with some reserve wines matured in older oak and allowed to complete malo-lactic conversion to soften the acidity.
