George’s Wines 'Georgy Girl' Sparkling Merlot 2017

$25.00
Light, moderately sweet and refreshing, this is a good, easy drinking sparkling red. It’s a perfect starter but also pairs well with good food, like a crispy Pork and papaya salad and has enough sweetness to combat the chilli with aplomb.

George’s Wines began life when Nick George bought the Springwood Vineyards in the famed Armagh Valley district of the Clare Valley. The vineyard for a number of years supplied Leasingham with all of its grapes. Since then Nick had purchased additional vineyards in the Clare Valley. Their best wine, ‘the Exile’ Shiraz is a bargain at just $50 per bottle.

130km north of Adelaide (and west of the Barossa), the Clare Valley sits within a high-altitude pocket granting the vineyards cool to cold nights with long, warm to hot summer days. This cooler climate grants thin-skinned (and indeed temperamental) grapes like rieslings a perfect climate in which to mature slowly without risk of mould during the harvest season. The resulting wines are perfumed, complex, softly flavoured yet powerful. There are several sub-regions in the 35km stretch of valley, pocketed with varying soils, altitudes and climates. Korean Steak Tacos

I went a little leftfield on this one. Lately, I’ve gotten into some Sparkling Shiraz wines. The wife isn’t a red drinker which is both good and bad, to be honest. Good as I can enjoy the bottle myself but bad because it makes it hard to choose wine together. She is, however, a HUGE bubbles fan, so I figured let’s give Sparkling Red a go! It feels like a celebration opening bubbles and to me, any day that tacos are involved is a HUGE celebration, so these guys are already a great match.

Crispy Pork & Papaya Salad
Pork is one of my favourite meats to eat – so versatile and great at anytime of the day too! This dish calls on my times travelling around Asia and having crazy good crispy skin pork, unbelievably flavourful dipping sauces and fresh & spicy salads.

There are several sub-regions in the 35km stretch of valley, pocketed with varying soils, altitudes and climates. West-facing, high-altitude slopes benefit from drying afternoon sun in summer, producing some of the regions best vintages. The vines are planted from 400 to 500 metres (1,300 to 1,600 ft). The higher altitude, compared to other wine regions in South Australia, ensures cool nights even during the heat of summer allowing the fruit to ripen more evenly and slowly. Soil is a mix of red to brown-grey over basement rock.
