A supremely confident and self-assured wine, with exceptionally bright yet intense red and blue fruits, and spice. Texture is wonderful, the acid tannins balance perfect and the finish a beautiful amalgam of fine fruit tannins and cedary, chewy oak tannins which add complexity. An amazing wine comprising 86% Shiraz and 14% Fer. Fer is an ancient varietal, likely of Basque country origin which is widely planted in Southwest France, and generally makes up 100% of reds coming out of the Marcilliac region. It is one of the grandparents of the superb Carmenere varietal and is prized for its impenetrable black coloring and density of fruit. Flavours sit in the blackberry, cherry and black tea spectrums, and the variety also typically offers a pleasing smokiness.

The Grenache (from 95 year old bush vines) was fermented on skins for 10 days after harvest with a small element of whole bunch. The shiraz is from Blewitt Springs and fermented on skins for 8 days then pressings were added back in. Both wines were then transferred to 8 and 9 year old barrels for the wines to develop without the intrusion of oak flavour.

This is a magnificent blend of robust, full bodied shiraz with spice and chocolate offset by the juicy red and blue fruits of old vine grenache. A wonderful wine to enjoy now but the structure suggests it has 10-15 years of improvement ahead of it.

A tightly coiled Cab that needs a little coaxing by way of an hour or 2 in the decanter. While that's happening, turn your thoughts to lamb and what you might be eating in an hour or 2 when the wine is cherry ripe. Funnily enough, we found cherries here, along with blackcurrant, cocoa, tomato leaf and a plushness emerging from an intense baseline once the wine had gulped a little air. A varietal and regional expression of Clare Valley Cabernet with piercing clarity of fruit, which is to say, an absolute delight. Violets, blackberries, plum, sage, bay leaf, mint, liquorice, curlicues of French oak and fine, waxy, supple tannins. Off script though, because this is massive - a huge mouthful - and yet expressive, somehow elegant, with a fluidity of movement and visibility of detail which belie the hulking muscularity. This is the seventh release of their flagship ‘Hills shiraz and as usual you’re hit immediately with a waft of black and blue fruits and the trademark white pepper that announces this wine as a “hills monster". The palate is full bodied and it’s here you see even more layers of complexity and intrigue, no doubt due to the co-fermentation of 5 different clones scattered throughout this unique vineyard.
