Dark black fruits, plenty of acidity, good length and a fine tannin finish make for a wine which is a delicious accompaniment to red meats already, but will also cellar for 10+ years.
The Hickinbothams have been growing grapes for 5 generations. 20 years ago they made the decision to become producers, launching the 3 Rings brand, much of which is sent over to the USA. The wine pretty much always does well when reviewed.
This might seem like a strange one, but I can honestly say that this combo really works. Usually, when you think of burgers you lean towards a beer, or even a nice glass of red. The freshness of the apple, spice coming through from the tomato jam, and the addition of pork had me leaning towards a Riesling.
So simple, a good pizza lets the ingredients sing. Superb prosciutto is a must for this dish.
